Today I'm sharing with you how to make perfect buttercream Icing. Buttercream frosting is a staple for cupcakes, cakes and many other baked goods. There are a few tips and tricks that I am going to share with you to get the most perfect buttercream Icing. Beat the butter for 5 minutes until it has become light and airy, doubled in size and lost most of it's colour. Start adding the icing sugar half a cup at a time, beating for about a minute in between each addition. Use the milk to thin out the consistency of the icing, add it a teaspoon at a time. This is also the time to add any flavourings or colourings that you would like. This icing can last in the fridge for a few weeks or the freezer for 3 months. Recipe: 1 lb (453 g) powdered sugar (about 4 cups) 3 tbsp (28 g) meringue powder (🤍 1/4 cup (60 ml) water (plus more for thinning) 1 tsp (1.2 ml) vanilla extract Meringue Powder Substitute: replace with 3 ounces (89ml) of egg whites. I've been making royal icing a long time and I have learned over the years that there is no need to make royal icing more complicated than necessary! I decorated three vanilla sphere cakes with three different designs using sprinkles, glitter and tie dye using white chocolate ganache. Cream Cheese Icing 4 oz (113g) butter, softened but still cool (around 65F/18C) 8 oz (227g) cream cheese, cold 4 c (454g) powdered sugar, sifted 1/2 tsp (3g) fine salt lemon juice or vanilla extract (optional) 1. Remove the cream cheese from the fridge and cut into small cubes. Let sit out briefly while preparing the rest of the ingredients. 2. Mix the butter on medium speed until smooth. 3. Add half of the powdered sugar and mix until combined. 4. Add the second half of the powdered sugar and the salt and mix until the texture of streusel. 5. With the mixer running, add cubes of cream cheese one at a time. 6. Mix until the icing is smooth and there are no visible clumps of butter or cream cheese. 7. Finish by adding lemon juice or vanilla extract. Add just a little at a time, monitoring the texture of the icing after each addition.

My new American Buttercream uses less powdered sugar than traditional recipes, resulting in a smoother, less gritty frosting. I have multiple sizes of this recipe. 🤍 INGREDIENTS👇🏼 For 3 cups 1 1/2 cups (340g) unsalted butter, softened slightly 2/3 cups (208g) light corn syrup or glucose syrup* 1 1/4 cups (141g) powdered sugar (unsifted ok) 1/8 teaspoon fine salt (to taste, start with a pinch) 1 teaspoon vanilla extract 1-6 tablespoons of heavy cream, cold (optional, pls see footnotes)* purple gel food coloring (optional) *I use Karo light corn syrup, a syrup of sugars (glucose + maltose) derived from corn. (High fructose syrup is a different type of syrup and not what I’m using here. Actually I'd be really surprised if as a home baker you have the syrup; it's not sold in conventional grocery stores.) The “light” is just an indication of the color of the syrup, not the sweetness. You’ll probably be able to substitute other syrups here if you like, but corn syrup is a flavorless option that allows us to customize this recipe for different flavors later on. If you sub something else, know that corn syrup is less sweet than other syrups. Agave and honey are both very sweet (actually agave contains more fructose than high fructose corn syrup). If you have invert syrup, you could use that too, but that is also sweeter than corn syrup. You’ll likely have to use less than what I’ve written in this recipe. This is a little over the maximum amount of sugar that will dissolve in the water contained in the butter. If you want less sweet buttercream, use less. If you wish for a stiffer consistency or sweeter buttercream, use more. Just know the more you add, the more grainy the finished buttercream will be. Don’t worry, though; it will still be light years smoother than a traditional American buttercream. *I've gotten feedback from you all and now have tested ways that you can tailor the texture of this buttercream. Some bakers like their buttercreams to lean towards buttery and prefer a denser feel for frosting cakes and piping. But if it's too much for you, add some heavy cream. Start with one tablespoon of cold heavy cream, then whisk on high speed. Keep repeating this process until you like the texture. The butter can emulsify more liquid, but you'll want to stop when it reaches a very firm and thick Greek yogurt-type consistency. If you get to the point where it looks too loose or perhaps broken, don't worry. Just add softened butter, one tablespoon at a time, then whip on high speed to reform the emulsion. Sa mga Ka-Mommy ko po na walang electric hand mixer (egg beater), wag po kayong mag-alala dahil sa videong ito ipapakita ko din po sa inyo na maari din natin itong gawin ng mano-mano using our manual whisk at pwede din namang tinidor. Magbibigay din po tayo ng ilang pang substitute sa ating stabilizer ng icing na Cream of Tartar. Mahalaga pong gumamit tayo ng stabilizer upang hindi bumagsak ang ating Icing. Kasama din dito ang ating tip kung paano hindi matutubig at mag crystallized ang ating gagawing Icing. Maaari po natin itong gamiting pang substitute doon sa ating Chocolate syrup na ginamit para sa ating Super Moist Chocolate Cake upang magkaron ng variant ang ating produkto. Hangad ko na makatulong ang videong ito sa mga Nanay na nag-uumpisa sa kanilang maliit na negosyo. Basta kailangan lang ng Sipag, Tyaga At Diskarte at Siguradong Tayo ay Aasenso.
